Simple Linguine with Lemon Garlic Butter

Quick and Easy meal, that will leave your family wanting more!

Ingredients

  • 1 package of fresh linguine, or boxed kind
  • 3 tbsp butter
  • 1.5 tbsp minced garlic or 2 fair sized garlic cloves
  • salt- tt
  • ground black pepper-tt
  • 1 lemon (zest)
  • 2 tbsp minced chives
  • 1/4 cup shaved Parmesan cheese or Asiago

Instructions

  1. Bring a pot of salted water to a boil and cook the linguine to al dente or longer if you prefer softer pasta. If using fresh pasta will only take 1-3 minutes so watch carefully.
  2. Meanwhile, heat a small skillet over medium heat. Add your butter, cook until melted, then add the garlic, salt, and ground black pepper. Turn heat to low while sweating out your garlic for 2 to 3 minutes.
  3. When mixture starts to smell fragrant take off heat and stir in lemon zest.
  4. Drain your pasta, toss with garlic butter, and fold in the chives and Parmesan cheese.
  5. Finish each dish with a squeeze of lemon, garnish with remaining shaved Parmesan and serve.

    I just made this, hubby and I were starving and in a rush (plus an empty fridge). Let me tell you, it was fast, easy, and delicious! I skipped the chives because I didn’t have them but it was delicious nonetheless! Thanks for the recipe!

    I made this as a side dish and it was delicious! The fresh chives and squirt of lemon at the end make all the difference. Yum!
