It might be your thermometer, could be a little off. Try taking it off a degree or 2 sooner 🙂

I followed everything to the T, and I was really hoping for a chewy caramel. Maybe next time I just need to cook the caramel a little less.

It turned out fabulous! It probably took a bit longer to boil out some of the moisture and I did need to add a bit of icing sugar, but it still worked. Thank you so much for that icing sugar tip! Great recipe. So, since I only used 5% cream, can I tell myself it’s diet fudge…??? lol.
